- Preheat Oven
- Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
- Make the Crumble Mixture
- In a large bowl, combine oats, flour, brown sugar, granulated sugar, salt, and baking soda.
- Stir in melted butter until crumbly.
- Form the Crust
- Press two-thirds of the mixture firmly into the bottom of the prepared pan.
- Prepare Lemon Filling
- In a separate bowl, whisk together sweetened condensed milk, lemon juice, lemon zest, and egg yolks until smooth.
- Assemble
- Pour lemon filling over the crust.
- Sprinkle remaining crumble mixture evenly on top.
- Bake
- Bake for 22–25 minutes or until the top is lightly golden.
- Cool & Slice
- Allow bars to cool completely before slicing into squares.
Notes
For cleaner slices, refrigerate before cutting.
Dust with powdered sugar for a classic lemon tart-style finish.
Store in the refrigerator for up to 5 days.
Freeze for up to 2 months.
