Ingredients
  

  • For the Oatmeal Crust & Crumble
  • 1 ½ cups old-fashioned oats
  • 1 ¼ cups all-purpose flour
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ¾ cup melted butter
  • For the Lemon Filling
  • 1 can 14 oz sweetened condensed milk
  • ½ cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 egg yolks

Method
 

  1. Preheat Oven
  2. Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
  3. Make the Crumble Mixture
  4. In a large bowl, combine oats, flour, brown sugar, granulated sugar, salt, and baking soda.
  5. Stir in melted butter until crumbly.
  6. Form the Crust
  7. Press two-thirds of the mixture firmly into the bottom of the prepared pan.
  8. Prepare Lemon Filling
  9. In a separate bowl, whisk together sweetened condensed milk, lemon juice, lemon zest, and egg yolks until smooth.
  10. Assemble
  11. Pour lemon filling over the crust.
  12. Sprinkle remaining crumble mixture evenly on top.
  13. Bake
  14. Bake for 22–25 minutes or until the top is lightly golden.
  15. Cool & Slice
  16. Allow bars to cool completely before slicing into squares.

Notes

For cleaner slices, refrigerate before cutting.
Dust with powdered sugar for a classic lemon tart-style finish.
Store in the refrigerator for up to 5 days.
Freeze for up to 2 months.
