This Mediterranean Chickpea Salad Recipe is a fresh, vibrant, and healthy salad made with chickpeas, cucumbers, tomatoes, olives, and herbs tossed in a lemon-olive oil dressing. It’s perfect for a light lunch, side dish, or meal prep inspired by classic Mediterranean food.

Ingredients
  

  • Salad Base
  • 1 can 15 oz chickpeas, drained and rinsed
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • ½ red onion thinly sliced
  • ½ cup Kalamata olives sliced
  • ½ cup feta cheese optional
  • 2 tbsp fresh parsley chopped
  • 1 tbsp fresh dill optional
  • Dressing
  • 3 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 tsp red wine vinegar
  • 1 clove garlic minced
  • 1 tsp dried oregano
  • Salt and black pepper to taste
  • Optional Add-Ins
  • Avocado slices
  • Roasted red peppers
  • Grilled chicken or tuna
  • Crispy chickpeas for topping

Method
 

  1. Drain and rinse chickpeas, then pat dry.
  2. Chop cucumber, tomatoes, onion, and herbs.
  3. In a small bowl, whisk olive oil, lemon juice, vinegar, garlic, oregano, salt, and pepper.
  4. In a large bowl, combine chickpeas, vegetables, olives, and herbs.
  5. Pour dressing over salad and toss gently.
  6. Add feta cheese or optional toppings.
  7. Toss lightly again or leave toppings on top.
  8. Chill for 15–30 minutes for best flavor, then serve.
