Mexican Chicken Casserole With Doritos

This Mexican Chicken Casserole With Doritos is a cheesy, creamy, and crunchy dinner packed with taco flavor. Made with shredded chicken, Rotel, salsa, and layers of crushed Nacho Cheese Doritos, this easy casserole is perfect for busy weeknights, potlucks, and family meals.

Ingredients
  

  • 3 cups cooked chicken shredded
  • 1 large bag Nacho Cheese Doritos lightly crushed
  • 1 can 10 oz Rotel tomatoes with green chilies
  • 1 cup salsa
  • 1 can 10.5 oz cream of chicken soup
  • 1/2 cup sour cream
  • 1 cup corn
  • 1 cup black beans drained and rinsed
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1 teaspoon taco seasoning

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. In a large bowl, mix chicken, Rotel, salsa, cream of chicken soup, sour cream, corn, black beans, cheese, and taco seasoning.
  3. Spread a layer of crushed Doritos on the bottom of the dish. Add half of the chicken mixture.
  4. Repeat layers and finish with extra cheese on top.
  5. Bake uncovered for 25–30 minutes until hot and bubbly.
  6. Let rest for 5 minutes before serving.

Notes

Don’t crush Doritos too fine to keep some crunch.
Add jalapeños for extra heat.
Substitute chicken with ground beef if desired.
Can be assembled ahead and refrigerated before baking.
