Method
- Preheat oven to 375°F (190°C) and grease a baking dish.
- In a large bowl, mix chicken, Rotel, salsa, cream of chicken soup, sour cream, corn, black beans, cheese, and taco seasoning.
- Spread a layer of crushed Doritos on the bottom of the dish. Add half of the chicken mixture.
- Repeat layers and finish with extra cheese on top.
- Bake uncovered for 25–30 minutes until hot and bubbly.
- Let rest for 5 minutes before serving.
Notes
Don’t crush Doritos too fine to keep some crunch.
Add jalapeños for extra heat.
Substitute chicken with ground beef if desired.
Can be assembled ahead and refrigerated before baking.
