Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 package 5.2 oz Boursin Garlic & Fine Herbs cheese
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • ½ cup chicken broth
  • ½ cup heavy cream
  • Salt and pepper to taste
  • 1 tsp Italian seasoning
  • Fresh parsley chopped (for garnish)
  • Optional Add-ins
  • ½ cup cherry tomatoes
  • 1 cup fresh spinach
  • ½ cup sliced mushrooms

Method
 

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Season chicken breasts with salt, pepper, and Italian seasoning.
  3. Heat olive oil in a skillet and sear chicken 2–3 minutes per side until lightly golden.
  4. In the same skillet, sauté garlic for 30 seconds. Add chicken broth and cream; simmer 2 minutes.
  5. Place chicken in baking dish and pour sauce around it.
  6. Spoon Boursin cheese evenly over each chicken breast.
  7. Bake uncovered for 20–25 minutes until chicken is cooked through and sauce is bubbly.
  8. Garnish with parsley and serve warm.

Notes

Serve over pasta or rice for an easy Boursin chicken pasta meal.
Use a thermometer (165°F / 74°C) for perfectly cooked chicken.
Great with roasted vegetables or crusty bread.
