Ingredients
  

  • 1 cup rolled oats
  • ¾ cup all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup butter softened
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¾ cup raisins
  • Optional Add-ins:
  • ½ cup chocolate chips
  • ¼ cup chopped nuts
  • 2 tablespoons seeds for granola-style cookies

Method
 

  1. Preheat oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a bowl, mix oats, flour, baking soda, cinnamon, and salt.
  3. In another bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add egg and vanilla extract, mixing until combined.
  5. Gradually add dry ingredients to wet ingredients and mix well.
  6. Fold in raisins and any optional add-ins.
  7. Scoop dough onto prepared baking sheet, spacing evenly.
  8. Bake for 10–12 minutes or until edges are golden brown.
  9. Let cool for a few minutes before serving.

Notes

Use rolled oats for the best chewy texture.
Soak raisins in warm water for 10 minutes for extra softness.
Do not overbake to keep cookies moist.
Chill dough for 20 minutes for thicker cookies.
For Oatmeal Raisin Bars, press dough into a baking pan and bake for 20–25 minutes.
