Method
- Preheat oven to 425°F (220°C). Line a baking tray with parchment paper or foil.
- Pat the chicken thighs dry using paper towels.
- If using the marinade, mix marinade ingredients and marinate chicken for 30 minutes.
- Rub olive oil over the chicken and season with garlic powder, paprika, thyme, salt, and pepper.
- Place chicken thighs on the tray, skin side up if using skin-on.
- Bake for 30–40 minutes. Boneless thighs need about 25–30 minutes.
- Broil for 3–5 minutes at the end for extra crispiness.
- Rest for 5 minutes before serving.
Notes
Always dry the chicken before seasoning for crisp skin.
Do not overcrowd the pan.
Internal temperature must reach 165°F (75°C).
