oven baked chicken thighs

Crispy, juicy oven baked chicken thighs made with simple spices and high heat. Works perfectly with bone-in, skin-on or boneless skinless chicken thighs for an easy, flavorful dinner.

Ingredients
  

  • 6 chicken thighs bone-in/skin-on or boneless/skinless
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme or Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Optional Marinade
  • 2 tablespoons soy sauce
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • 2 cloves garlic minced

Method
 

  1. Preheat oven to 425°F (220°C). Line a baking tray with parchment paper or foil.
  2. Pat the chicken thighs dry using paper towels.
  3. If using the marinade, mix marinade ingredients and marinate chicken for 30 minutes.
  4. Rub olive oil over the chicken and season with garlic powder, paprika, thyme, salt, and pepper.
  5. Place chicken thighs on the tray, skin side up if using skin-on.
  6. Bake for 30–40 minutes. Boneless thighs need about 25–30 minutes.
  7. Broil for 3–5 minutes at the end for extra crispiness.
  8. Rest for 5 minutes before serving.

Notes

Always dry the chicken before seasoning for crisp skin.
Do not overcrowd the pan.
Internal temperature must reach 165°F (75°C).
Works great for meal prep and leftovers.
