This Parmesan Zucchini Fritters Recipe is a crispy, cheesy, and flavorful way to enjoy fresh zucchini. Golden on the outside and soft inside, these fritters are perfect as a snack, appetizer, or side dish and can be pan-fried or air-fried.

Ingredients
  

  • Main Ingredients
  • 2 medium zucchini grated
  • 1 tsp salt for draining moisture
  • 2 large eggs
  • ½ cup all-purpose flour
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic minced
  • ¼ cup green onions or parsley chopped
  • ½ tsp black pepper
  • ½ tsp baking powder optional
  • For Cooking
  • 2 –3 tbsp olive oil for pan-frying
  • OR
  • Cooking spray for air fryer method

Method
 

  1. Grate zucchini and place in a bowl. Sprinkle with salt and let sit for 10 minutes.
  2. Squeeze out excess moisture using a clean towel or cheesecloth.
  3. In a bowl, mix zucchini, eggs, flour, Parmesan, garlic, herbs, pepper, and baking powder until combined.
  4. Heat olive oil in a skillet over medium heat OR preheat air fryer to 375°F (190°C).
  5. Scoop batter into small patties and flatten slightly.
  6. Pan-fry 3–4 minutes per side until golden and crispy OR air fry 10–12 minutes, flipping halfway.
  7. Remove and drain on paper towels if pan-fried.
  8. Serve warm with yogurt dip, sour cream, or garlic sauce.

Notes

  • Always squeeze zucchini well to avoid soggy fritters.
  • Fresh Parmesan gives the best flavor and crisp texture.
  • Don’t overcrowd pan or air fryer basket.
  • Best served fresh for maximum crispiness.
  • Store in the fridge for up to 3 days.
  • Reheat in air fryer or skillet to keep them crispy.
