Peach Blueberry Cobbler

Ingredients
  

  • Fruit Filling
  • 3 cups peaches sliced (fresh or canned, drained)
  • 2 cups blueberries fresh or frozen
  • ½ cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract
  • ½ tsp cinnamon optional
  • Cobbler Topping
  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • tsp baking powder
  • ¼ tsp salt
  • ½ cup milk
  • ¼ cup melted butter
  • Optional Toppings
  • Vanilla ice cream
  • Whipped cream
  • Powdered sugar

Method
 

  1. Preheat oven to 350°F (175°C). Grease an 8x8 or 9x9 baking dish.
  2. In a bowl, mix peaches, blueberries, sugar, lemon juice, cornstarch, vanilla, and cinnamon. Pour into baking dish.
  3. In another bowl, whisk flour, sugar, baking powder, and salt.
  4. Add milk and melted butter. Stir until just combined.
  5. Spoon batter evenly over fruit mixture.
  6. Bake for 35–40 minutes or until golden brown and bubbling.
  7. Let cool for 10–15 minutes before serving.

Notes

  • Use fresh or frozen fruit; no need to thaw frozen blueberries.
  • Do not overmix the batter for a softer cobbler texture.
  • Adjust sugar depending on fruit sweetness.
  • Add a pinch of nutmeg for extra flavor.
  • Best served warm with ice cream.
  • Store leftovers in the refrigerator for up to 3 days.
