Ingredients
  

  • Cake Batter
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup butter softened
  • ¾ cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream
  • 2 cups diced peaches
  • Streusel Topping
  • ¾ cup brown sugar
  • ½ cup all-purpose flour
  • 1 tsp cinnamon
  • 5 tbsp cold butter cubed
  • Optional Glaze
  • ½ cup powdered sugar
  • 1 –2 tbsp milk
  • Splash of vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9-inch baking pan.
  2. In a bowl, combine brown sugar, flour, and cinnamon for streusel. Cut in cold butter until crumbly. Set aside.
  3. In a medium bowl, whisk flour, baking powder, baking soda, and salt.
  4. In a large bowl, cream butter and sugar until fluffy.
  5. Add eggs and vanilla extract. Mix well.
  6. Stir in sour cream.
  7. Gradually add dry ingredients and mix until combined.
  8. Fold in diced peaches gently.
  9. Spread batter into prepared pan.
  10. Sprinkle streusel topping evenly over batter.
  11. Bake 40–50 minutes until golden and toothpick comes out mostly clean.
  12. Cool slightly before slicing.
  13. If desired, whisk glaze ingredients together and drizzle over cake.

Notes

  • Fresh ripe peaches give the best flavor and texture.
  • Cold butter creates crisp streusel topping.
  • Can also be baked as coffee cake muffins.
  • Store covered up to 4 days.
  • Delicious served warm with coffee or tea.
