Ingredients
  

  • 4 salmon fillets
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Pineapple Glaze
  • 1 cup pineapple juice
  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 3 cloves garlic minced
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch mixed with 1 tablespoon water

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking tray with parchment paper.
  2. In a saucepan, combine pineapple juice, honey, soy sauce, garlic, and lemon juice. Bring to a simmer.
  3. Stir in cornstarch slurry and cook until glaze thickens. Remove from heat.
  4. Place salmon on the tray, brush with olive oil, and season with salt and pepper.
  5. Spoon half of the glaze over salmon.
  6. Bake for 12–15 minutes until salmon flakes easily.
  7. Brush with remaining glaze before serving.
  8. Air Fryer Option: Cook at 390°F for 8–10 minutes, glazing halfway.

Notes

Use fresh pineapple juice for best flavor.
Do not overcook the salmon.
This glaze also works well with cod or other white fish.
