  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ½ cup unsalted butter softened
  • ¾ cup brown sugar packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • ½ cup buttermilk
  • For the Crumb Topping
  • ¾ cup all-purpose flour
  • ½ cup brown sugar packed
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 5 tablespoons unsalted butter melted
  • Optional Vanilla Glaze
  • ¾ cup powdered sugar
  • 1 –2 tablespoons milk
  • ½ teaspoon vanilla extract

Method

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9-inch square baking pan and line it with parchment paper.
  3. To make the crumb topping, combine flour, brown sugar, cinnamon, and salt in a medium bowl.
  4. Add the melted butter and stir with a fork until coarse crumbs form. Set aside.
  5. In a separate bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  6. In a large bowl, beat softened butter, brown sugar, and granulated sugar for 2–3 minutes, until light and creamy.
  7. Add the eggs one at a time, mixing well after each addition.
  8. Stir in the vanilla extract.
  9. Add pumpkin puree and buttermilk and mix until combined.
  10. Gradually add the dry ingredients and mix just until incorporated. Do not overmix.
  11. Pour the batter into the prepared pan and smooth the top.
  12. Sprinkle the crumb topping evenly over the batter.
  13. Gently press a few of the larger crumbs into the batter.
  14. Bake for 40–50 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  15. Allow the cake to cool in the pan for at least 20 minutes before slicing.
  16. For the optional glaze, whisk powdered sugar, milk, and vanilla until smooth.
  17. Drizzle the glaze over the cooled cake.
  18. Slice and serve.

Notes

  • Use plain pumpkin puree, not pumpkin pie filling.
  • Homemade pumpkin puree can be used if it isn't too watery.
  • Don't overmix the batter after adding the flour.
  • For easier slicing, allow the cake to cool before cutting.
  • You can replace the individual spices with about 2 teaspoons pumpkin pie spice.
  • Add chopped pecans or walnuts to the crumb topping for extra crunch.
  • Store covered at room temperature for up to 3 days.
  • Refrigerate for up to 5 days.
  • Individual slices can be frozen for up to 3 months.
