Ingredients

  • For the Pumpkin Cake
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ½ cup unsalted butter softened
  • ¾ cup brown sugar packed
  • ¼ cup granulated sugar
  • 2 large eggs
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • ½ cup buttermilk
  • For the Crumb Topping
  • ¾ cup all-purpose flour
  • ½ cup brown sugar packed
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 5 tablespoons unsalted butter melted
  • Optional Vanilla Glaze
  • ¾ cup powdered sugar
  • 1 –2 tablespoons milk
  • ½ teaspoon vanilla extract

Method

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9-inch square baking pan and line it with parchment paper.
  3. To prepare the crumb topping, combine flour, brown sugar, cinnamon, and salt in a bowl.
  4. Add the melted butter and mix with a fork until coarse crumbs form. Set aside.
  5. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  6. In a separate bowl, beat softened butter, brown sugar, and granulated sugar until light and creamy, about 2–3 minutes.
  7. Add the eggs one at a time, mixing well after each addition.
  8. Stir in the vanilla extract.
  9. Add the pumpkin puree and buttermilk and mix until combined.
  10. Gradually add the dry ingredients to the wet mixture.
  11. Stir just until combined. Do not overmix.
  12. Pour the batter into the prepared baking pan and smooth the top.
  13. Sprinkle the crumb topping evenly over the batter.
  14. Bake for 40–50 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  15. Allow the cake to cool in the pan for at least 20 minutes.
  16. For the optional glaze, whisk powdered sugar, milk, and vanilla until smooth.
  17. Drizzle the glaze over the cooled cake.
  18. Slice and serve.

Notes

  • Use plain pumpkin puree, not pumpkin pie filling.
  • For a stronger fall flavor, replace the individual spices with about 2 teaspoons pumpkin pie spice.
  • Don't overmix the batter once the flour has been added.
  • Make coarse crumbs for the topping rather than mixing it into a smooth paste.
  • Allow the cake to cool before slicing for the best texture.
  • Add ½ cup chopped pecans or walnuts to the crumb topping if desired.
  • Add ½–¾ cup chocolate chips to the batter for a chocolate variation.
  • For an apple version, fold finely diced apple into the batter.
  • Store covered at room temperature for up to 3 days.
  • Refrigerate for up to 5 days.
  • Freeze individual slices for up to 3 months.
