Ingredients
  

  • 1 cup pumpkin puree
  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ½ cup butter softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • Optional Add-ins:
  • ½ cup chocolate chips
  • ¼ cup chopped nuts
  • Cream cheese frosting for topping

Method
 

  1. Preheat oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, cream butter, granulated sugar, and brown sugar until smooth.
  4. Add egg, vanilla extract, and pumpkin puree; mix until combined.
  5. Gradually add dry ingredients to wet ingredients and mix gently.
  6. Fold in optional add-ins if desired.
  7. Scoop dough onto prepared baking sheet, spacing evenly.
  8. Bake for 12–15 minutes or until cookies are set.
  9. Let cool before serving.

Notes

Use pure pumpkin puree, not pumpkin pie filling.
Do not overmix the batter to keep cookies soft.
Chill dough for thicker cookies.
