Ingredients

  • 2 cups rotisserie chicken shredded
  • 1 cup apple diced
  • 1 cup red grapes halved
  • 1 cup celery finely chopped
  • ¼ cup red onion finely diced (optional)
  • ½ cup walnuts or pecans chopped
  • Dressing
  • ½ cup mayonnaise
  • 1 tbsp Greek yogurt optional
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • For Serving
  • Butter lettuce or romaine leaves
  • Extra nuts for topping
  • Fresh parsley optional

Method
 

  1. Shred or chop rotisserie chicken into bite-sized pieces.
  2. Dice apples, halve grapes, and chop celery and onions.
  3. In a bowl, whisk mayonnaise, Greek yogurt, mustard, lemon juice, salt, pepper, and garlic powder.
  4. Add chicken, fruits, celery, onions, and nuts to a large bowl.
  5. Pour dressing over mixture and gently toss to combine.
  6. Spoon mixture into lettuce leaves to form boats.
  7. Top with extra nuts or herbs if desired.
  8. Serve immediately or chilled.
