Method
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Season chicken on both sides with chili powder, cumin, smoked paprika, garlic powder, salt, and pepper.
- Heat olive oil in a skillet over medium heat. Sear chicken for 2–3 minutes per side.
- Transfer chicken to the prepared baking dish.
- Top evenly with black beans, corn, and diced tomatoes.
- Sprinkle shredded cheese generously over the top.
- Bake uncovered for 25–30 minutes, or until chicken is cooked through and cheese is melted and bubbly.
- Garnish with fresh cilantro before serving.
