Santa Fe Chicken is a bold Southwestern dish made with seasoned chicken, black beans, corn, tomatoes, and melted cheese. Inspired by Tex-Mex and cantina-style flavors, this easy baked recipe is perfect for busy weeknights or as a flavorful casserole-style meal.

Ingredients
  

  • lbs chicken breasts thighs, or tenders
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels
  • 1 can diced tomatoes with green chilies
  • cups shredded Mexican-blend or cheddar cheese
  • Fresh cilantro for garnish
  • Optional Add-Ins
  • Sliced bell peppers or onions
  • Jalapeños for extra heat
  • Cooked rice for casserole-style serving

Method
 

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Season chicken on both sides with chili powder, cumin, smoked paprika, garlic powder, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat. Sear chicken for 2–3 minutes per side.
  4. Transfer chicken to the prepared baking dish.
  5. Top evenly with black beans, corn, and diced tomatoes.
  6. Sprinkle shredded cheese generously over the top.
  7. Bake uncovered for 25–30 minutes, or until chicken is cooked through and cheese is melted and bubbly.
  8. Garnish with fresh cilantro before serving.

Notes

Chicken tenders cook faster and work great for quick meals.
Add cooked rice underneath for a Southwest chicken casserole variation.
Serve with tortillas, chips, or over rice for a full Tex Mex chicken meal.
Leftovers store well in the fridge for up to 3 days.
