- Cook sausage in a skillet over medium heat until browned. Remove and set aside.
- Whisk eggs, milk, salt, and pepper in a bowl.
- In the same pan, melt butter and scramble the eggs until soft and fluffy.
- Return sausage to the pan. Stir in cheese and optional add-ins.
- Warm tortillas slightly to make them flexible.
- Spoon filling into each tortilla, fold sides in, and roll tightly.
- Optional: Toast roll-ups seam-side down for 1–2 minutes until golden.
- Serve warm with salsa or your favorite sauce.
