Ingredients
  

  • ½ lb breakfast sausage
  • 1 cup shredded cheddar cheese
  • ¼ cup milk
  • Salt and pepper to taste
  • 6 medium flour tortillas
  • 1 tbsp butter or oil
  • Optional Add-ins
  • ½ cup cooked hash browns
  • ¼ cup diced bell peppers
  • 2 tbsp chopped onions
  • Salsa or hot sauce for serving

Method
 

  1. Cook sausage in a skillet over medium heat until browned. Remove and set aside.
  2. Whisk eggs, milk, salt, and pepper in a bowl.
  3. In the same pan, melt butter and scramble the eggs until soft and fluffy.
  4. Return sausage to the pan. Stir in cheese and optional add-ins.
  5. Warm tortillas slightly to make them flexible.
  6. Spoon filling into each tortilla, fold sides in, and roll tightly.
  7. Optional: Toast roll-ups seam-side down for 1–2 minutes until golden.
  8. Serve warm with salsa or your favorite sauce.

Notes

Do not overcook eggs for the best texture.
Great for meal prep and freezer-friendly.
Add hash browns for a breakfast casserole flavor.
