Sheet-Pan Pineapple BBQ Chicken

This Sheet-Pan Pineapple BBQ Chicken is a sweet, smoky, and juicy one-pan dinner made with tender chicken, tangy BBQ sauce, and caramelized pineapple. It’s one of the easiest BBQ chicken recipes for busy weeknights.

Ingredients
  

  • Chicken
  • 2 lbs chicken thighs or chicken breasts
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Pineapple BBQ Sauce
  • 1 cup BBQ sauce
  • 1 cup pineapple chunks fresh or canned
  • ¼ cup pineapple juice optional
  • 2 tbsp soy sauce
  • 1 tbsp honey or brown sugar
  • 1 tsp chili flakes optional
  • Vegetables Optional
  • 1 red bell pepper chopped
  • 1 red onion sliced
  • 1 zucchini sliced
  • Garnish
  • Fresh cilantro or parsley
  • Sesame seeds optional

Method
 

  1. Preheat oven to 400°F (200°C). Line a sheet pan.
  2. Season chicken with olive oil, salt, pepper, garlic powder, and paprika.
  3. In a bowl, mix BBQ sauce, pineapple chunks, pineapple juice, soy sauce, and honey.
  4. Place chicken and vegetables on the sheet pan.
  5. Pour half of the sauce over everything.
  6. Bake for 25–30 minutes, basting halfway through.
  7. Remove from oven, brush with remaining sauce.
  8. Bake an additional 5–10 minutes until chicken is fully cooked (165°F).
  9. Garnish with cilantro and serve.

  • Chicken thighs give juicier results for bbq chicken thighs recipes.
  • Chicken breasts work well for lighter chicken breast recipes.
  • Don’t overcrowd the pan for better caramelization.
