Method
- Add beef stew meat to the slow cooker.
- Top with diced onion, sliced mushrooms, and minced garlic.
- Pour in beef broth, Worcestershire sauce, and Dijon mustard.
- Season with paprika, salt, and black pepper. Stir gently to combine.
- Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until beef is tender.
- In a small bowl, mix cornstarch with water. Stir into the slow cooker to thicken the sauce. Cook for 15 minutes.
- Turn off the slow cooker and stir in sour cream until smooth and creamy.
- Garnish with fresh parsley and serve warm.
Notes
Use chuck roast or stew meat for the most tender slow-cooked beef
Always add sour cream at the end to prevent curdling
For extra richness, stir in a little cream cheese
