Ingredients
  

  • lbs ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 can 15 oz kidney beans or black beans, drained and rinsed
  • 1 can 15 oz corn, drained
  • 1 can 14.5 oz diced tomatoes
  • 1 can 10.5 oz cream of mushroom or cream of chicken soup
  • 2 cups frozen diced potatoes or hash browns
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • cups shredded cheddar cheese

Method
 

  1. In a skillet over medium heat, brown the ground beef with diced onion until fully cooked. Drain excess grease.
  2. Stir in garlic and cook for 30 seconds until fragrant.
  3. Transfer beef mixture to the slow cooker.
  4. Add beans, corn, diced tomatoes, cream soup, potatoes, paprika, salt, and black pepper.
  5. Stir everything together until well combined.
  6. Cover and cook on LOW for 6 hours or HIGH for 3 hours, until potatoes are tender.
  7. Sprinkle shredded cheese over the top during the last 20 minutes of cooking.
  8. Cover and cook until cheese is melted.
  9. Stir gently and serve hot.

Notes

Use lean ground beef for lighter easy healthy crockpot dinner recipes.
Ground turkey can be substituted for beef.
Add bell peppers or jalapeños for extra flavor.
