Ingredients
Method
- Prepare the Beef
- Cut the beef into evenly sized bite-sized pieces. Pat dry with paper towels and season lightly with salt and pepper.
- Optional Searing Step
- Heat olive oil in a skillet over medium-high heat. Sear the beef cubes for 2–3 minutes per side until browned. This step adds extra flavor but can be skipped for convenience.
- Add Ingredients to Slow Cooker
- Place the beef into the slow cooker. Add minced garlic, butter slices, paprika, parsley, Worcestershire sauce, and beef broth.
- Slow Cook
- Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the beef is tender and infused with garlic butter flavor.
- Stir and Adjust Seasoning
- Gently stir the beef bites and taste the sauce. Adjust salt and pepper if needed.
- Serve
- Serve hot over mashed potatoes, rice, pasta, or alongside steamed vegetables for a balanced healthy high protein meal.
Notes
For a healthier crockpot version, use a leaner cut of beef and reduce butter slightly.
Add vegetables like green beans, mushrooms, or carrots during the last 2 hours of cooking.
This recipe is great for meal prep and reheats well.
To thicken the sauce, remove the lid for the last 30 minutes or stir in a small cornstarch slurry.
