Method
- Place the chicken breasts or thighs in the bottom of the slow cooker.
- Arrange the carrots, bell pepper, broccoli, and green beans evenly over the chicken.
- In a medium bowl, whisk together honey, soy sauce, minced garlic, olive oil, basil, and black pepper.
- Pour the honey garlic sauce evenly over the chicken and vegetables.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is fully cooked and tender.
- If a thicker sauce is desired, mix cornstarch and water, stir it into the slow cooker, and cook an additional 20 minutes on HIGH.
- Spoon sauce over the chicken and vegetables before serving.
Notes
Chicken thighs provide extra moisture, while breasts keep the dish leaner.
Serve over rice, quinoa, noodles, or cauliflower rice for a complete meal.
Leftovers store well in the refrigerator for up to 4 days.
Add zucchini or snap peas during the last hour to prevent overcooking.
