- Preheat oven to 350°F (175°C). Grease a baking dish.
- In a saucepan, combine peaches, sugar, lemon juice, cinnamon, nutmeg, cornstarch, and vanilla. Cook 5–7 minutes until syrupy.
- Stir in butter until melted. Pour mixture into baking dish.
- In a bowl, mix flour, sugar, baking powder, and salt.
- Add milk, melted butter, and vanilla. Stir until just combined.
- Spoon batter over peach filling evenly.
- Bake for 35–40 minutes or until golden and bubbly.
- Let cool for 15 minutes before serving.
Notes
- Use ripe peaches for best flavor.
- Canned peaches work if well drained.
- Do not overmix the batter to keep topping soft.
- Serve warm with ice cream or whipped cream.
