Ingredients
  

  • Salad
  • 3 cups watermelon cubed and chilled
  • cups strawberries sliced
  • 1 large cucumber sliced or cubed
  • ¼ small red onion thinly sliced (optional)
  • ½ cup feta cheese crumbled (optional)
  • Fresh mint leaves chopped
  • Dressing
  • 2 tbsp olive oil
  • 1 tbsp fresh lime juice
  • 1 tsp honey optional
  • Salt to taste
  • Black pepper to taste
  • Optional Add-ins
  • Basil leaves
  • Arugula
  • Chili flakes
  • Balsamic glaze drizzle

Method
 

  1. Chill watermelon and cucumber for best freshness.
  2. Cut watermelon into cubes, slice strawberries, and prepare cucumber.
  3. Add watermelon, strawberries, cucumber, and red onion to a large bowl.
  4. In a small bowl, whisk olive oil, lime juice, honey, salt, and pepper.
  5. Stir in chopped mint leaves.
  6. Pour dressing over salad and gently toss.
  7. Sprinkle feta cheese on top if using.
  8. Chill for 10–15 minutes before serving.
  9. Serve cold and fresh.

  • Best served fresh for maximum crunch and flavor.
  • Add feta just before serving to keep texture intact.
  • Do not overmix to avoid breaking fruit pieces.
  • Store leftovers in the fridge for up to 24 hours.
