- Preheat Oven
- Preheat oven to 375°F.
- Prepare the Chicken
- Using a sharp knife, cut a pocket into the side of each chicken breast, being careful not to slice all the way through.
- Make the Filling
- In a medium bowl, mix cream cheese, mozzarella, Parmesan, spinach, garlic, Italian seasoning, paprika, salt, and pepper until well combined.
- Stuff the Chicken
- Divide the filling evenly and spoon into each chicken breast pocket. Secure with toothpicks if necessary.
- Sear the Chicken
- Heat olive oil in an oven-safe skillet over medium heat. Sear chicken for 2–3 minutes per side until lightly golden.
- Bake
- Transfer skillet to the oven and bake for 18–22 minutes, or until internal temperature reaches 165°F.
- Rest & Serve
- Let chicken rest for 5 minutes before removing toothpicks and serving.

Notes
If chicken breasts are very thick, pound slightly for even cooking.
Do not overstuff to prevent filling from leaking.
For a lighter healthy chicken dinner, use reduced-fat cream cheese.
Store leftovers in an airtight container in the refrigerator for up to 4 days.
