Ingredients
  

  • 4 boneless skinless chicken breasts
  • 4 oz cream cheese softened
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 cup fresh spinach finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • Optional Add-Ins:
  • 2 tablespoons chopped sun-dried tomatoes
  • Fresh parsley for garnish

Method
 

  1. Preheat Oven
  2. Preheat oven to 375°F.
  3. Prepare the Chicken
  4. Using a sharp knife, cut a pocket into the side of each chicken breast, being careful not to slice all the way through.
  5. Make the Filling
  6. In a medium bowl, mix cream cheese, mozzarella, Parmesan, spinach, garlic, Italian seasoning, paprika, salt, and pepper until well combined.
  7. Stuff the Chicken
  8. Divide the filling evenly and spoon into each chicken breast pocket. Secure with toothpicks if necessary.
  9. Sear the Chicken
  10. Heat olive oil in an oven-safe skillet over medium heat. Sear chicken for 2–3 minutes per side until lightly golden.
  11. Bake
  12. Transfer skillet to the oven and bake for 18–22 minutes, or until internal temperature reaches 165°F.
