Method
- If using fresh corn, cook briefly (boil or grill), then let cool and cut kernels off the cob.
- Chop tomatoes, cucumber, onion, and herbs.
- In a small bowl, whisk together olive oil, lemon or lime juice, honey, salt, and pepper.
- In a large bowl, combine corn, tomatoes, cucumber, onion, herbs, and avocado.
- Pour dressing over the salad and toss gently to combine.
- Serve immediately or chill for 20–30 minutes before serving.
