Ingredients
  

  • 3 cups corn fresh, frozen, or canned and drained
  • 1 cup cherry tomatoes halved
  • 1/2 cucumber diced
  • 1/4 red onion finely chopped
  • 1/4 cup fresh basil or cilantro chopped
  • 1 avocado diced
  • For the Dressing:
  • 3 tablespoons olive oil
  • 2 tablespoons lemon or lime juice
  • 1 teaspoon honey
  • Salt and pepper to taste

Method
 

  1. If using fresh corn, cook briefly (boil or grill), then let cool and cut kernels off the cob.
  2. Chop tomatoes, cucumber, onion, and herbs.
  3. In a small bowl, whisk together olive oil, lemon or lime juice, honey, salt, and pepper.
  4. In a large bowl, combine corn, tomatoes, cucumber, onion, herbs, and avocado.
  5. Pour dressing over the salad and toss gently to combine.
  6. Serve immediately or chill for 20–30 minutes before serving.

  • Use fresh corn for the best flavor.
  • Add avocado just before serving to prevent browning.
