Ingredients
  

  • 2 lbs boneless skinless chicken breasts
  • 1 can 20 oz pineapple chunks (with juice)
  • ½ cup brown sugar
  • ½ cup soy sauce
  • ¼ cup ketchup
  • 2 cloves garlic minced
  • 1 bell pepper chopped (optional)
  • ½ onion sliced
  • 1 tablespoon cornstarch optional, for thickening
  • 1 tablespoon water if thickening

Method
 

  1. Prepare the Chicken:
  2. Place the chicken breasts in the bottom of the crock pot.
  3. Make the Sauce:
  4. In a mixing bowl, combine pineapple (with juice), brown sugar, soy sauce, ketchup, and minced garlic. Stir well until fully mixed.
  5. Combine Ingredients:
  6. Pour the sauce mixture over the chicken. Add sliced onions and bell peppers if using.
  7. Slow Cook:
  8. Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours, until the chicken is tender and fully cooked.
  9. Thicken the Sauce (Optional):
  10. In a small bowl, mix cornstarch and water. Stir into the crock pot during the last 20–30 minutes of cooking to create a thicker sweet and sour chicken crockpot-style sauce.
  11. Shred & Serve:
  12. Shred chicken with two forks or leave whole. Spoon extra sauce over the top before serving.

Notes

 
For extra sweetness, add 1 tablespoon honey.
