Method
- Prepare the Chicken:
- Place the chicken breasts in the bottom of the crock pot.
- Make the Sauce:
- In a mixing bowl, combine pineapple (with juice), brown sugar, soy sauce, ketchup, and minced garlic. Stir well until fully mixed.
- Combine Ingredients:
- Pour the sauce mixture over the chicken. Add sliced onions and bell peppers if using.
- Slow Cook:
- Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours, until the chicken is tender and fully cooked.
- Thicken the Sauce (Optional):
- In a small bowl, mix cornstarch and water. Stir into the crock pot during the last 20–30 minutes of cooking to create a thicker sweet and sour chicken crockpot-style sauce.
- Shred & Serve:
- Shred chicken with two forks or leave whole. Spoon extra sauce over the top before serving.
Notes
For extra sweetness, add 1 tablespoon honey.
For heat, add red pepper flakes.
Chicken thighs can be used instead of breasts for juicier results.
Store leftovers in the refrigerator for up to 4 days.
Freeze for up to 2 months in an airtight container.
