Method
- Step 1: Prepare the Crockpot
- Place the chicken into the bottom of the slow cooker.
- Step 2: Make the Sauce
- In a bowl, mix pineapple chunks (with juice), soy sauce, brown sugar, ketchup, and minced garlic. Pour the mixture over the chicken.
- Step 3: Slow Cook
- Cover and cook:
- On LOW for 6–7 hours
- OR
- On HIGH for 3–4 hours
- Cook until chicken is tender and fully cooked.
- Step 4: Shred or Slice
- Remove chicken and shred with two forks or cut into chunks. Return to the crockpot.
- Step 5: Thicken the Sauce
- Mix cornstarch and water to create a slurry. Stir into the crockpot and cook on HIGH for an additional 20–30 minutes until sauce thickens.
- Step 6: Serve
- Serve warm over rice and garnish with green onions or sesame seeds if desired.
Notes
Chicken thighs provide extra juiciness.
Add red bell peppers during the last hour for extra flavor and color.
Sauce thickens as it cools; add a splash of pineapple juice when reheating.
