Preheat oven to 375°F (190°C) and grease a 9x13 baking dish.
In a skillet, cook ground meat until browned.
Add onion and garlic; cook until softened.
Stir in taco seasoning and a splash of water. Simmer 2–3 minutes.
Add rice, broth, salsa, beans, corn, and diced tomatoes. Mix well.
Pour mixture into baking dish and cover tightly with foil.
Bake for 35–40 minutes until rice is tender and liquid is absorbed.
Remove foil and top with cheddar and Monterey Jack cheese.
Bake uncovered for 5–10 minutes until cheese is melted and bubbly.
Let rest 5 minutes before serving.
Add toppings and serve warm.
