Ingredients
  

  • Taco Meat Mixture
  • 1 lb ground beef or ground turkey
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 packet taco seasoning
  • ½ cup water
  • 1 cup salsa
  • 1 can black beans drained and rinsed (optional)
  • 1 cup corn kernels
  • Casserole Base
  • 1 32 oz bag frozen tater tots
  • 2 cups cheddar cheese shredded
  • 1 cup Monterey Jack cheese shredded
  • Optional Toppings
  • Sour cream or Greek yogurt
  • Diced tomatoes
  • Green onions
  • Jalapeños
  • Avocado or guacamole
  • Fresh cilantro
  • Hot sauce

Method
 

  1. Preheat oven to 400°F (200°C) and grease a 9x13 baking dish.
  2. In a skillet, cook ground beef until browned.
  3. Add onion and garlic; cook until softened. Drain excess fat.
  4. Stir in taco seasoning and water; simmer 2–3 minutes.
  5. Mix in salsa, beans, and corn; cook for 2–3 minutes.
  6. Spread meat mixture evenly in baking dish.
  7. Sprinkle 1 cup cheddar and ½ cup Monterey Jack cheese over meat.
  8. Arrange frozen tater tots in a single layer on top.
  9. Bake for 35–40 minutes until tots are golden and crispy.
  10. Remove from oven, add remaining cheese, and bake 5 more minutes until melted.
  11. Rest 5 minutes before serving.
  12. Add toppings and serve warm.

Notes

  • Do not thaw tater tots before baking for best crispiness.
  • For extra crunch, broil for 2–3 minutes at the end.
  • Ground turkey can be used instead of beef for a lighter version.
  • Can be assembled ahead and refrigerated up to 24 hours.
  • Freezes well before baking for up to 2 months.
