Ingredients
  

  • For the Salad:
  • 2 cups cooked chicken breast shredded
  • 2 cups shredded cabbage green or purple
  • 1 cup carrots julienned
  • 1/2 red bell pepper thinly sliced
  • 1/4 cup green onions chopped
  • 1/4 cup fresh cilantro chopped
  • For the Dressing:
  • 2 tablespoons peanut butter
  • 2 tablespoons lime juice
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 clove garlic minced
  • 1 teaspoon grated ginger
  • Water as needed to thin

Method
 

  1. In a bowl, whisk together peanut butter, lime juice, soy sauce, honey, sesame oil, garlic, and ginger. Add water to reach desired consistency.
  2. In a large bowl, combine chicken, cabbage, carrots, bell pepper, green onions, and cilantro.
  3. Pour dressing over the salad and toss until evenly coated.
