  • 2 cans tuna drained
  • 1 cucumber diced
  • 1 avocado diced
  • 1 cup cherry tomatoes halved
  • ¼ cup red onion finely chopped
  • 2 tbsp fresh parsley or cilantro chopped
  • Dressing
  • 2 tbsp olive oil
  • Juice of 1 lemon or lime
  • Salt and black pepper to taste
  • ½ tsp garlic powder

  • Feta cheese
  • Corn
  • Chickpeas
  • Hard-boiled eggs
  • Jalapeños

Method
 

  1. Dice cucumber and avocado into bite-sized pieces.
  2. Halve cherry tomatoes and finely chop red onion.
  3. Drain tuna thoroughly and place in a large mixing bowl. Flake with a fork.
  4. In a small bowl, whisk together olive oil, lemon juice, garlic powder, salt, and black pepper.
  5. Add cucumber, avocado, tomatoes, onion, and herbs to the tuna.
  6. Pour dressing over salad and gently toss until evenly combined.
  7. Taste and adjust seasoning if needed.
  8. Serve immediately or chill for 15–20 minutes before serving.

Notes

  • Add avocado just before serving for best texture.
  • Fresh lemon juice creates the brightest flavor.
  • Great low-carb healthy tuna salad option.
