Cook the Pasta
Bring a large pot of salted water to a boil. Cook pasta according to package directions. Reserve ½ cup pasta water before draining.
Sauté the Mushrooms
Heat olive oil in a large skillet over medium heat.
Add sliced mushrooms and cook until golden brown and tender (about 6–8 minutes).
Stir in garlic and cook for 1 minute until fragrant.
Make the Creamy Mushroom Sauce
Pour in broth and simmer for 2–3 minutes.
Add heavy cream, Italian seasoning, thyme, salt, and pepper.
Simmer gently until slightly thickened.
Stir in Parmesan cheese until melted and smooth.
Combine Everything
Add cooked pasta to the skillet and toss to coat in the creamy sauce.
If needed, add reserved pasta water to loosen the sauce.
Stir in spinach and cook until wilted.
Serve
Garnish with extra Parmesan and freshly cracked black pepper. Serve immediately.
