This Vegan Tater Tot Breakfast Casserole is a crispy, savory breakfast bake made with seasoned tofu, vegetables, and golden tater tots. A hearty plant-based breakfast perfect for brunch or breakfast for dinner.

Ingredients
  

  • 1 bag 32 oz frozen tater tots
  • 14 oz firm tofu drained and crumbled
  • 1 tablespoon olive oil
  • 1/2 onion diced
  • 1 bell pepper diced
  • 1 cup mushrooms chopped
  • 2 cloves garlic minced
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1/2 teaspoon black salt optional
  • Salt and pepper to taste
  • 1/4 cup unsweetened plant milk
  • 1/2 cup vegan shredded cheese optional

Method
 

  1. Preheat oven to 400°F (200°C). Grease a 9×13-inch baking dish.
  2. Sauté onion, pepper, mushrooms, and garlic in olive oil until soft.
  3. Add crumbled tofu, turmeric, paprika, black salt, salt, and pepper. Cook 5–7 minutes.
  4. Stir in plant milk and cook 2 more minutes.
  5. Spread mixture into the baking dish. Sprinkle vegan cheese on top if using.
  6. Arrange frozen tater tots in a single layer over the mixture.
  7. Bake 35–40 minutes until tots are golden and crispy.
  8. Rest 5 minutes before serving.

Notes

Do not thaw tater tots before baking.
Drain tofu well to prevent excess moisture.
Add spinach or kale for extra nutrients.
