Method
- Preheat oven to 400°F (200°C). Grease a 9×13-inch baking dish.
- Sauté onion, pepper, mushrooms, and garlic in olive oil until soft.
- Add crumbled tofu, turmeric, paprika, black salt, salt, and pepper. Cook 5–7 minutes.
- Stir in plant milk and cook 2 more minutes.
- Spread mixture into the baking dish. Sprinkle vegan cheese on top if using.
- Arrange frozen tater tots in a single layer over the mixture.
- Bake 35–40 minutes until tots are golden and crispy.
- Rest 5 minutes before serving.
Notes
Do not thaw tater tots before baking.
Drain tofu well to prevent excess moisture.
Add spinach or kale for extra nutrients.
