These Caramel Apple Cheesecake Bars feature a buttery graham cracker crust, creamy cheesecake filling, spiced apple topping, and a rich caramel drizzle. Ingredients
  

  • Graham Cracker Crust
  • 2 cups graham cracker crumbs
  • ½ cup unsalted butter melted
  • ¼ cup granulated sugar
  • Cheesecake Filling
  • 16 oz cream cheese softened
  • ¾ cup granulated sugar
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • Apple Layer
  • cups apples peeled and diced (Granny Smith or Honeycrisp)
  • cup brown sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • 1 teaspoon lemon juice
  • Topping
  • ½ cup caramel sauce plus more for serving

Method
 

  1. Preheat oven to 325°F (165°C). Line a 9×13-inch baking pan with parchment paper.
  2. In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of the pan.
  3. Bake crust for 10 minutes, then set aside to cool slightly.
  4. Beat cream cheese and sugar until smooth and creamy.
  5. Add eggs one at a time, mixing just until combined. Stir in vanilla.
  6. Spread cheesecake filling evenly over the crust.
  7. In another bowl, toss apples with brown sugar, cinnamon, nutmeg, and lemon juice.
  8. Spoon apple mixture evenly over the cheesecake layer.
  9. Bake for 40–45 minutes, until edges are set and center slightly jiggles.
  10. Cool completely, then refrigerate for at least 3 hours.
  11. Drizzle with caramel sauce before slicing into bars.

Notes

For Caramel Apple Crisp Cheesecake Bars, add a simple oat crumble topping before baking.
Use firm apples to prevent excess moisture.
Chill fully for clean slices and best texture.
