Zucchini Fritters

These Zucchini Fritters are crispy on the outside and tender inside, made with fresh zucchini, herbs, and cheese. A quick and easy snack, side dish, or appetizer that can be pan-fried or made in the air fryer for a lighter option.

Ingredients

  • 2 medium zucchini grated
  • 1 tsp salt for draining moisture
  • 2 large eggs
  • ½ cup all-purpose flour or almond flour for low carb recipes
  • ¼ cup grated Parmesan cheese
  • 2 cloves garlic minced
  • ¼ cup green onions or parsley chopped
  • ½ tsp black pepper
  • ½ tsp baking powder optional
  • For Cooking
  • 2 –3 tbsp olive oil for pan-frying

Method
 

  1. Grate zucchini and place in a bowl. Sprinkle with salt and let sit for 10 minutes.
  2. Squeeze out excess moisture using a clean towel or cheesecloth.
  3. In a bowl, mix zucchini, eggs, flour, Parmesan, garlic, herbs, pepper, and baking powder.
  4. Heat olive oil in a skillet over medium heat OR preheat air fryer to 375°F (190°C).
  5. Scoop batter into small patties and flatten slightly.
  6. Pan-fry for 3–4 minutes per side until golden and crispy OR air fry for 10–12 minutes, flipping halfway.
  7. Transfer to paper towel to remove excess oil if pan-fried.
  8. Serve warm with yogurt sauce, sour cream, or dipping sauce of choice.

Notes

  • Always squeeze zucchini well to avoid soggy fritters.
  • Use almond flour for a low carb recipes option.
  • Don’t overcrowd the pan or air fryer basket.
  • Best served fresh for maximum crispiness.
  • Store leftovers in the fridge for up to 3 days.
  • Reheat in air fryer or skillet for best texture.
